Verdict
Coyote is one of Koch's better single-agave releases because the varietal itself has enough structural presence to come through at scale. At 47% from two serious producers, this drinks meaningfully more specific than Koch's espadín or tobalá. Buy for coyote education; compare to Rey Campero's coyote for a more intense counterpoint.

Nose: Roasted pepper, smoked cacao, cooked agave, a woody top
Palate: 47% – coyote (a rare karwinskii-adjacent, though registered here with Alberto Vasquez and Pedro Hernandez in San Baltazar Guélavila/Sola de Vega) drinks denser and more savory than madrecuishe, and Koch's version reads that way with clean proof
Finish: Warm, woody
