Cedrosanum is the sotol species most people meet first, and La Higuera's version delivers the cedar-and-mineral signature cleanly. At 48% the structure holds without demanding, and the Chihuahua terroir is legible. Don't stop here – a Sotoleros single-sotolero bottle sits at the top of the category, but at its tier it's a credible introduction to what sotol cedar actually tastes like.
