Verdict
Manso sahuayo is Michoacán's cultivated workhorse, roughly the regional answer to espadín. La Luna's version pushes the proof higher than most espadíns and gets a more serious bottle for it. Buy as a cultivated-agave counterpoint to the bruto, chino, and azul wild/cultivated ensambles. Another example of Hernández Escot and the Perez family reading Michoacán correctly.
Cultivated Michoacán, at the proof wild agaves usually demand
Tasting notes
Nose: Cooked agave – then light herb, faint pepper, green fruit
Palate: 48.33% – Edgar 'Jigy' Perez and Hernán Hernández Escot's manso sahuayo is the cultivated-agave anchor of the La Luna range; softer than the wild bruto family but structurally generous at 48.33%
Finish: Clean, warm – long
The bottom line
The workhorse agave at a serious proof. Cultivated Michoacán with conviction
