Verdict
Most pechugas use turkey or chicken; La Luna's uses wild boar (jabalí), which changes the savory program meaningfully. This sits alongside the Sánchez codorniz pechuga above as one of the more compelling non-standard pechugas we've tasted. Buy for the format education; pair with La Luna's straight bruto to hear what's agave and what's animal. Michoacán's best pechuga at this tier.
A jabalí pechuga where the boar is the point, not the brand
Tasting notes
Nose: Roasted fruit up front. Wild boar umami, warm spice, green herb underneath
Palate: 48.51% – Hernán Hernández Escot's bruto-chino base distilled as pechuga with wild boar (jabalí) pulls a savory, intense pechuga with clear Michoacán identity; the proof is on the low side for a jabalí reference but the pechuga format disguises that slightly
Finish: Warm, spiced. Very long
The bottom line
Wild boar changes the savory program. A serious, unusual pechuga
