Verdict
La Medida's jabalí from José Santiago is a producer showcase – convallis demands technique most palenques can't afford, and the fact that this bottle exists at 47% without the usual sulfur-foam apology means the still work is genuinely clean. Lalocura's jabalí is still the benchmark; this one is half the money and three-quarters of the impression.

Nose: Violet, soapy floral, cooked agave, a mineral trace under green herb
Palate: Floral-stone and restrained at 47%. Jabalí is the agave that breaks producers; José Santiago López keeps the foam problem out of the glass and the convallis signature – soap, violet, faint bitter almond, comes through clean
Finish: Floral-bitter, wet slate, with a slow cool tail – long
