Verdict
Del Maguey's pechuga gets the attention but Lalocura's is the more careful production. The ingredients don't overwhelm the agave; the pechuga run is a gloss, not a mask, the espadín-tobaziche base retains its own character under the seasonal fruit and seasoning. 49% proof and Minas clay-still production together give the format the structural support it needs. The community agrees. A pechuga that teaches the format rather than performing it.
A pechuga that earns the format
Tasting notes
Nose: Warm spice, cooked fruit, almond, faint meat, hot clay
Palate: Layered and savory at 49% – espadín + tobaziche base with pechuga treatment and Lalo's clay-still discipline
Finish: Warm, slightly sweet, unending
The bottom line
Our pick for a pechuga to sit with
