Del Maguey's pechuga gets the attention but Lalocura's is the more careful production. The ingredients don't overwhelm the agave; the pechuga run is a gloss, not a mask, the espadín-tobaziche base retains its own character under the seasonal fruit and seasoning. 49% proof and Minas clay-still production together give the format the structural support it needs.
