Lalocura Tobaziche-Barril is the kind of ensamble that reveals the maestro's intention – keeping two karwinskii varieties in conversation rather than collapsing them into a generic wild-agave blend is a confidence move. Nose: Green herb. Then chalk, bright mineral

Palate: Mineral and sharp-edged at 50%. Tobaziche and barril (both karwinskii) run different registers – tobaziche leaner, barril denser – and Ángeles lets them speak without blending them to the middle

Finish: Chalk-chalky, cool slow fade – long
