Verdict

Where the ensamble uses verde to soften the cenizo, this leaves the northern agave exposed: dry, herbal, almost austere. The pulque ferment shows as a faint sour thread rather than a full funk. It is less generous than its sibling and more honest about the region. Pour it when you want Nuevo León without an Oaxacan accent translating for you.

The desert, unsweetened

Tasting notes

Nose: Desert scrub, dry herb, warm stone, a faint sourdough note

Palate: Lean and dry at 49-51%. Cenizo's herbal-mineral bite up front, the pulque ferment leaving a quiet sour edge, little sweetness anywhere

Finish: Dry, herbal, medium-long

The bottom line

Pour it for the unvarnished northern profile
