Verdict

Tepextate takes twenty-five years to mature and punishes any shortcut in the roast, so a clean one is always worth attention. Pascual Canseco's is all nervous energy, the vegetal-floral high notes held in tension with the Mixteca Baja minerality. Hunt it down if Vago or Mal Bien taught you to love the agave; this is the wild end of the same conversation.

Tepextate that refuses to sit still

Tasting notes

Nose: Green bell pepper, crushed herb, citrus blossom, wet slate, a faint resin

Palate: Electric at 49-51%. Tepextate's vegetal-floral charge runs the length of the palate, mineral and bright, never settling

Finish: Long, cooling, green, with a peppery snap
