Verdict

Jabalí is one of the two or three agaves where proof isn't negotiable, under 50% the liquid thins to a ghost of itself. Leyendas made the right call here. The bottle reads closest to Lalocura's jabalí in spirit: uncleaned-up, a little feral, obviously difficult to produce. The agave gets its own weather in the glass.

Tasting notes

Nose: Wild herb, then cracked pepper, dry stone, a flash of pine

Palate: Knotty and difficult in the way jabalí should be. The convallis is famously hard to distill, and Leyendas has clearly spent the yield cost to do it at 50.1% – the liquid shows the savage vegetal character that underproofed jabalí loses

Finish: Peppery, resinous. Stays long
