Verdict

San Luis Potosí verde can be densely composed – Derrumbes has shown what salmiana sounds like when the ABV gives it a stage. Leyendas' version swings between 42% and 45%, and at both stops the agave's mineral-vegetal character reads muffled. Juan Jose Hernandez's work deserves the proof Derrumbes gives it. Pass in favor of the Derrumbes SLP bottling; this one is state-series tourism.

Tasting notes

Nose: Bell pepper with sweet corn, a flint note

Palate: The salmiana's distinctive vegetal character comes through at 45% but largely evaporates at 42%. The lower-ABV version reads as a missed opportunity more than a bottle

Finish: Short to medium, peppery, quickly gone

The bottom line

Underproofed for the agave. Go Derrumbes instead
