Verdict
It's rare for a single bottle to salvage a producer's catalog on the strength of one decision, but Los Javis' tobalá does it by finally putting the agave at the ABV it needs. At 46% the potatorum reads with its aromatic altitude intact, and the bottle separates cleanly from the underproofed jovens in the line. Banhez's tobalá still wins on value; this one wins on authorship. Buy with confidence.

Tasting notes
Nose: Honey, wet stone, green melon, wildflower lift
Palate: At 46% the tobalá finally gets the structure the rest of the portfolio lacks – the potatorum's bright mineral signature comes through clean, and the palate lifts where the espadín bottles fold. A noticeably different producer on this expression
Finish: Dry, floral – long
