Verdict
Tobalá's argument is aromatic lift, not raw concentration, and 53% is past the ABV where potatorum benefits from more structure. Los Nahuales' still proof tobalá demonstrates the upper boundary – the agave is present but the floral-mineral register is slightly flattened by the weight. The house's standard tobalá at regulation proof is the more complete pour. Skip this one unless you're studying the format.
Proof without aromatic range is noise
Tasting notes
Nose: Dense honey, warm stone, green melon, a cooked-agave edge
Palate: 53% is higher than most tobalá peaks, and the bottle shows the cost – the aromatic altitude that defines potatorum reads partly buried under the weight. Interesting as an experiment; less compelling as a pour
Finish: Warming, slightly muted
The bottom line
Proof overshoots the agave. Buy the standard tobalá instead
