Verdict

Jabalí is the agave that most clearly distinguishes producers who take proof seriously from those who don't. Los Ocotales is in the first camp. At 51% the convallis reads the way it's supposed to, knotty, peppery, a little unruly, and the liquid carries the difficult-to-distill character that makes the agave worth the yield cost. Think of it next to Lalocura's jabalí: same weight class, same commitment. Buy.

Nose: Pine resin, cracked pepper, wild herb, warm mineral

Palate: 51% is the ABV jabalí needs and Los Ocotales delivers it, the convallis's feral vegetal register holds and the mid-palate has the weight that underproofed jabalí always loses

Finish: Peppery, resinous. Long
