Verdict

Strip the column still and the barrel away from agave azul and you get this: the plant tequila is built on, distilled rustic in Michoacán. Elias Garcia Soto keeps it citric and earthy rather than candied. It will not displace your favorite espadín, but pour it for a tequila drinker and watch the category click into place.

Nose: Cooked agave, green apple, wet earth, a wisp of woodsmoke, citrus peel

Palate: Sweeter entry from the azul sugars, then a rustic earthen turn the Filipino still presses in. Lighter-bodied at 47.8%, citric, with a savory undertow

Finish: Short to medium, clean, faintly herbal
