Verdict
Lucy Pistolas is one of the newer Guanajuato bottlings trying to put the state on shelves, which is an ambition we support. 40% is the wrong proof for the ambition, though – salmiana rewards higher ABV and this version leaves the agave's distinctive mineral-vegetal character on the table. Derrumbes' Guanajuato work at higher proof shows what the state can actually do. Track Lucy Pistolas if they proof up.

Tasting notes
Nose: Green pepper with a salty-mineral edge, dry hay
Palate: 40% is the lowest proof salmiana should be bottled at – the agave's vegetal-flinty register holds but the mid-palate runs thin. The northern dialect is legible but muted
Finish: Short to medium, peppery, clean
