Verdict
Rodriguez's single-varietal papalometl is the study bottle that makes sense of the ensamble work – Puebla potatorum reads cleaner and cooler than Oaxacan tobalá, and the house's cut stays consistent. The proof range limits the grade; at 48-50% this is a reference bottling, at 44-45% it's a good one. Check the label. A worthwhile pickup either way.
Papalometl as Puebla's tobalá cousin
Tasting notes
Nose: Honey, then wildflower, warm stone, a citrus lift
Palate: Papalometl is Puebla's potatorum-family agave, and Rodriguez has rendered it with the house's characteristic cool mineral edge. The 44-50% proof range is wide, and the bottles at the higher end read noticeably more complete than those at the lower
Finish: Drying, floral. Stays medium-long
The bottom line
A buy – aim for the top of the proof range
