Commit. Machee's cuishe is one of the clearest single-varietal karwinskii bottlings we've tasted in the sub-$120 range – at 49.2% the agave is fully rendered, and the producer has clearly spent the yield cost to deliver it. Think of it next to Real Minero's cuishe: same weight class, the same commitment to the agave's difficult character. Buy immediately.

Tasting notes

Nose: Wet clay with cool mint, a mineral lift

Palate: 49.2% is a notch above where most cuishe is bottled, and Machee has produced the agave with every dimension visible – the karwinskii signature is sharp, the river rock spine is emphatic, the vegetal mid-palate is uncompromised

Finish: Drying, vegetal – very long
