Macurichos Conejo Pechuga
Rabbit pechuga – a less-common protein, honestly handled
Score: 3.5/5 agaves
- Producer: Macurichos Mezcal
- Region: Santiago Matatlán, Oaxaca
- Agave: Espadin
- ABV: 47%
- Price: $150 ($$)
Verdict
Pechuga is a format where the protein choice should produce a distinguishable liquid, not just a marketing story, and Macurichos' rabbit version does the harder thing. At 47% the espadín stays audible and the rabbit distillate carries as a genuine structural contributor – drier, leaner, more savory than the category norm. Think of it next to the better Wahaka or Mezcalosfera pechuga work. Buy for the format curriculum.
Pechuga with a protein that actually changes the bottle
Tasting notes
Nose: Cooked agave, warm spice, a savory-meat undertone, dried fruit
Palate: Rabbit in the still produces a drier, leaner protein signature than turkey or chicken pechugas, and at 47% Macurichos has kept the espadín base audible while the rabbit adds its particular savory edge. A serious pechuga, more study than showpiece
Finish: Warm, faintly savory. Stays long
The bottom line
A pechuga where the protein actually shows up
