Pechuga is a format where the protein choice should produce a distinguishable liquid, not just a marketing story, and Macurichos' rabbit version does the harder thing. At 47% the espadín stays audible and the rabbit distillate carries as a genuine structural contributor – drier, leaner, more savory than the category norm. Think of it next to the better Wahaka or Mezcalosfera pechuga work. Buy for the format curriculum.
