Verdict
Criollo from Estado de Mexico runs modest by nature and Jose Geremias Vasquez Diaz gets a little more out of it than the adjacent Carmello Pedroza Alvarez bottle. Pour them side by side if you can, the Filipino-versus-copper conversation shows. Track the technique, not the agave; neither bottle is a destination on its own.
Filipino still rescues a shy agave – not by much, but measurably
