Verdict
Triple-distillation of jabalí is an unusual technical choice and Santo Martínez Cruz justifies it – the San Lorenzo Albarradas bottle runs cleaner and more focused than the more common double-distilled releases. Commit if you can find it. Closer to what Lalocura accomplishes with its most patient releases than any typical jabalí. Honor Santo's name.
Triple-distilled jabalí – Santo makes the case for the extra pass
Tasting notes
Nose: Green walnut, then warm stone, citrus peel, wet herb
Palate: Triple-distilled in copper at 48.7% – Santo Martínez Cruz takes jabalí further through the still than most producers would risk. The third pass clarifies without stripping; the agave's soap-and-herb signature reads exceptionally clean
Finish: Mineral, cold
The bottom line
Technique-forward jabalí. Buy for the cleaner reading
