Verdict
Track Jose Erubiel Mota Martinez across his Melate releases, this straight papalometl is the baseline and the pechuga and lima variants are the refinements. Reach for this as the introduction to his hand. Closer to what Mal Bien does with its wild Guerrero work than most Oaxaca-side papalometl. A consistent one-palenque name.
Papalometl in Oaxaca's dry south – a different wild-honey register
Tasting notes
Nose: Wild honey with green pepper, warm stone
Palate: Copper, Jose Erubiel Mota Martinez's straight papalometl reads denser than Guerrero cupreata cousins but with the same wild-honey signature. Zapotitlan Lagunas gives it a drier terroir edge
Finish: Warming, earthy
The bottom line
The introduction to Jose Erubiel's catalog. Solid base
