Verdict

Commit. Ildefonso Macedas Ginez is one of Puebla's most reliable names and this pichomel is the Melate Club release that argues for his entire catalog – honor him. Closer to what Real Minero and Lalocura achieve at their most patient than any commercial Puebla release. Buy both his pichomel and his jabalí if you can still find them.

Pichomel at 49.6% – Ildefonso's second consecutive reference bottle

Tasting notes

Nose: Wild honey with green melon, resin

Palate: Copper at 49.6% – Ildefonso Macedas Ginez distills pichomel in Atolotitlan, Caltepec with the same confidence his jabalí carries. Pichomel is a rare wild agave and he makes the case for its place on shelves

Finish: Warming, resinous – very long

The bottom line

Reference-grade Puebla pichomel. Buy without thinking
