Verdict
Ageo and Felipe Cortés are reliable hands on karwinskii, and their bicuishe at 48.75% is a tidy example of what the lighter karwinskii cousin can do, aromatic, dry, disciplined. Not the bottle that will blow minds, but the bottle we'd keep on hand for a karwinskii flight or a late-evening sipping slot. Dependable Mal Bien.
Bicuishe the way Miahuatlán intended
Tasting notes
Nose: Green pepper up front. Wet hay, crushed mineral, lime pith underneath
Palate: 48.75% of refrescador-pulled bicuishe, a lighter, leaner karwinskii than madrecuishe, the Cortés cut keeps it aromatic and dry without thinning it out
Finish: Dry, green, long
The bottom line
A clean bicuishe you can trust
