Verdict
Madrecuishe under 48% is almost always a ceiling-limited bottle; Mal Bien's Ramos release at 52.3% clears that ceiling so completely the agave sounds like a different plant. Starchy, mineral, dry, drawn in clean lines. A reference madrecuishe for anyone who thinks the agave is just a lighter tobaziche, it isn't.
Madrecuishe above its usual ceiling, unmistakably right
Tasting notes
Nose: Wet grass, then green pepper, crushed mineral, faint citrus zest
Palate: 52.3% is where madrecuishe wants to live, the karwinskii's starchy density gets driven through every register, refrescador clarity keeps it from getting heavy
Finish: Long, dry, iron-tinged-herbal
The bottom line
The madrecuishe proof argument, bottled
