Verdict
Emiliano and Tomás Gutiérrez make the quietest papalote in the Mal Bien catalog, not a bad thing. Where the Barranca bottle shouts and the Sonido bottle hums, this one talks in complete sentences. Buy it if you want Chilapa papalote without the wild-herb punch, and put it beside the Barranca for a compare-contrast no tasting note can substitute for.

Nose: Green herb, cooked corn, cool mineral, light smoke
Palate: 46.2% of a tidier, less wild-edged papalote than the Barranca bottle, the Gutiérrez brothers' cut reads disciplined and cool, trading some of the cupreata's feral top note for polish
Finish: Dry, flinty – long
