Verdict

José Diaz Bustamante's Memorable espadín is one of the great pours in the category, an espadín that makes every other 40% bottle feel like a rough draft. At this proof and this level of craft, the agave stops being a commodity and becomes an argument for the maestro. If you've only had commercial espadín, this will retune your ear.

Tasting notes

Nose: Ripe pear with toasted cane, a fine high smoke

Palate: 47.1% with a texture most wild-agave bottles envy, cooked agave concentrated to syrup, then cut clean by mineral and pepper, a mid-palate that doesn't thin out before the finish arrives

Finish: Peppery, sweet and dry at once. Stays very long
