Verdict
Memorable Tobaziche is the quieter cousin to Memorable Bicuishe, and rewards the drinker willing to slow down. José Diaz Bustamante presents the agave dry and unornamented, at a proof that respects the lean profile. This is benchmark-level karwinskii work, a bottle Real Minero would release and call it a highlight. Buy when found.
Tobaziche is karwinskii stripped to architecture. This version wears the blueprint proudly
Tasting notes
Nose: Green wood – then underripe peach, wet flint, mild smoke
Palate: 45% carries tobaziche's drier, more angular profile through the mid-palate, less fruit than bicuishe, more structure, a spine that rewards slow drinking
Finish: Austere, mineral, long
The bottom line
Worth the chase. Reference tobaziche
