Goat pechuga is a specialty inside a specialty, the rare producer commits to turkey or chicken, the even rarer producer picks goat and makes you believe the choice was load-bearing. The bicuishe-espadín base carries the seasoning without being subsumed, which is the whole test of the format. A Mezcalero that earns the numbered series' reputation for editorial ambition.
