Verdict
Job Cortés' bicuishe is a serious and specific bottle – quiet compared to the more flamboyant Mezcalosfera releases, and legibly a producer choice rather than a market compromise. The Cortés family's project keeps producing bottlings where the producer's specific hand is identifiable from the glass; this one is Job's, and his particular discipline is a dry, saline, mineral register that doesn't fight the agave. Consensus 3.9 is a touch conservative.
Mezcalosfera's release notes read like a producer's notebook because they're written by one
Tasting notes
Nose: Green pepper, wet moss, cooked agave, white flower
Palate: Lean and saline, with the bicuishe character rendered cleanly at 45.66%. Not the most showy bottle; one of the most correct
Finish: Cooling, mineral. Very long
The bottom line
A Mezcalosfera worth the hunt
