Verdict
Mezcasiarca's mole pechuga is one of the more ambitious pechuga releases on the US market, rather than the standard poultry-and-fruit, the distillation is built around mole's full ingredient roster, and the result drinks like a condensed kitchen. This is pechuga the way the best Banhez or Vago examples define the form. Hunt it as a holiday pour.
Mole pechuga is pechuga that ate the whole meal
Tasting notes
Nose: Roasted chile with dried fruit, toasted spice, cooked agave
Palate: 51.07% with the mole distillation reading as layered spice and chocolate across the espadín base, pechuga where you can taste the kitchen, not just the bird
Finish: Spiced, warming, long
The bottom line
Worth chasing. Mole pechuga with real ambition
