Verdict
Salmiana is one of the few agaves whose character refuses to be flattened by commercial proof, and Teresa Rubio Murillo's interpretation is the argument for the variety. Zacatecas salmiana reads sharper and greener than the San Luis Potosí versions, and this bottle gets the herbal note across even at 40%. Buy it as the Miel de Tierra worth keeping on a shelf; skip the rest of the line.
Salmiana does what the espadín can't – survive 40%
Tasting notes
Nose: Green pepper, damp hay, hot stone, a savory vegetal edge
Palate: Salmiana at 40% is still too low, but the agave's bitter-green register punches through anyway, salmiana's signature celery-herb bite carries the bottle
Finish: Vegetal, mineral, medium
The bottom line
The pick of the Miel de Tierra line. Modest recommendation
