Verdict
Montelobos' ensamble is made with care by people who know production – Iván Saldaña is a trained enologist, and the discipline shows at every level of the bottle. That's not the critique; the critique is that the liquid tastes like it was made by someone hitting a spec sheet rather than chasing a voice. Technically correct, editorially anonymous. Consensus 3.5 grades the technique; we grade the mezcal.
