Verdict
The Montelobos pechuga is the bottle where Iván Saldaña's enologist training stops fighting the mezcal and starts helping it. The same control that flattens the base espadín is the right tool for pechuga's seasoning arithmetic. The best Montelobos we've tasted, and the only one where the house style earns the category it's playing in.
