Verdict

Most of the coyote in our catalog comes from Miahuatlán; the Brena brothers' San Luis Amatlán version offers a different terroir reading – slightly softer, slightly sweeter, still recognizably karwinskii. Four reviewers at 3.4; reading at a hair higher. Build a coyote flight: Noble Coyote's San Luis Amatlán, NETA's Miahuatlán.

Coyote outside Miahuatlán is its own conversation – Noble Coyote starts it

Nose: Dry citrus peel, wet stone, green herb, white pepper

Palate: 48% coyote from San Luis Amatlán – lean karwinskii with a slightly sweeter, fuller mid-palate than the Miahuatlán coyotes
