Verdict
Don Beto Ortiz's palenque turns up all over the Oaxaca landscape; this is the bottle that bears his name and it's steady without being the most expressive thing on his résumé. The 42% ceiling clips the tobalá a little. For a first ensamble from a named maestro, it clears the bar, hunt the Palenqueros-series Alberto Ortiz bottles for what the hand can really do.

Tasting notes
Nose: Cooked agave with river stone
Palate: Espadín-tobalá duet at 42%, with the tobalá bringing lift and the espadín handling the weight. Clean distillate, middle lane
Finish: Mineral, gently warm, medium
The bottom line
Credible named-maestro mid-range. Trade up for the single-agave Ortiz bottlings
