Verdict

Palalma's regional project is the best argument in the category that mezcal isn't a Oaxaca phenomenon with tourists. San Luis Potosí shows up here as a place with its own climate, its own plants, and its own idiom – and at 50% the bottle is proofed to express all of it. Reach for it over any second Oaxaca bottle.

San Luis Potosí is the mezcal state most drinkers have never considered. Palalma is the reason to start

Tasting notes

Nose: Desert herb with citrus peel, a mineral top

Palate: 50% and distinctly northern – drier, greener, more austere than Oaxaca. Palalma holds the proof without letting it dominate

Finish: Dry, sharply herbaceous – long

The bottom line

Reach for it. San Luis Potosí deserves more attention than it gets
