Verdict
Palalma's regional project is the best argument in the category that mezcal isn't a Oaxaca phenomenon with tourists. San Luis Potosí shows up here as a place with its own climate, its own plants, and its own idiom – and at 50% the bottle is proofed to express all of it. Reach for it over any second Oaxaca bottle.
