The argument for glass-aging over wood is that it lets time do its work without adding flavor, and Palalma's Michoacán cupreata is among the best demonstrations we've tasted. Track it alongside the Guerrero capón from the same house to understand what cupreata can do in two climates under one producer's hand. Buy either without hesitation.
