Verdict
San Martinero is a lesser-known Oaxaca agave and this is one of the reference bottles for it. Palalma respects the proof the way a maestro would – by treating it as a structural feature rather than a marketing point. Reach for it when you've worn out espadín and tobalá and want an agave you haven't memorized yet.

Tasting notes
Nose: Cooked agave – then dried fig, dark spice, smoke, a meaty undertone
Palate: The proof is the first note and then the agave arrives behind it – dense, dark, minerally, with a floral lift in the back that cuts the weight. Palalma's signature restraint under high ABV
Finish: Warming, complex. Very long
