Verdict
Palalma's espadilla capón makes the case that the capón cut isn't just for cupreata. Puebla espadilla is already more austere than its Oaxaca cousin; the capón treatment puts density back in. Reach for it when you want to taste what agaves do when they're forced to conserve sugar, and don't skip past the capón-cupreata bottle from the same house.

Nose: Honey, cooked agave, green herbs, a trace of smoke
Palate: Around 50% and with the capón process doing its sugar-concentration work, this drinks denser and sweeter than a regular espadilla, legibly Puebla, legibly worked harder
