Verdict
Palenqueros' ensambles rarely miss and this one doesn't, it just doesn't clear the bar set by the cinco magueyes. The espadín-madrecuishe pairing is one of the more common Oaxacan blends for a reason; each agave buys time for the other. Reach for it when you want a classic two-agave structure at committed proof.
A proof-forward ensamble that does its homework
Tasting notes
Nose: Cooked pineapple, wet stone, green pepper, a mineral lift
Palate: The espadín fronts the entry and the madrecuishe takes the back half, with 53% giving each of them enough air. Cleanly rendered, if a shade predictable for the house
Finish: Stone, dry. Stays long
The bottom line
Reach for it. A solid ensamble; not the house's best
