Verdict
Palenqueros' sierra-negra ensambles tend to skew darker than their karwinskii-led ones, and this bottle is no exception. The espadín doesn't quite lift it out of its gravity, which reads as either mood or monotony depending on the drinker. Reach for it when you want ensamble in the minor key.
Sierra Negra is the agave that anchors an ensamble the way a bass line anchors a song
Tasting notes
Nose: Cooked agave, then earth, dark chocolate, a savory undertone
Palate: 50% ensamble with sierra negra's heavy mineral-savory frame taking most of the palate and the espadín acting as a lighter ceiling. Cleanly made, just a touch monochrome
Finish: Long, earthy, warming
The bottom line
Reach for it when you want ensamble in a darker register
