Verdict
Palomo's tobalá does more than the house espadín and less than the mole pechuga. At 46% it clears the proof floor for potatorum and delivers a legible wild-agave experience without the price tag of Palenqueros or Real Minero. Reach for it as a reasonable mid-shelf tobalá when the top-shelf options aren't available.
