Verdict
Pechotierra is one of the few producers making a sustained argument for Nuevo León as a mezcal state on par with Durango, and this cenizo is the bottle that supports the argument. More austere than the Durango versions, more mineral-driven, and at 50% proofed to carry the character. Reach for it in a northern-state flight with Origen Raíz Durango for a two-state comparison.

Nose: Hot hay, dry grass, cedar smoke, a mineral top, dark honey
Palate: 50% of cenizo from Nuevo León – drier and more austere than Durango cenizo, with the state's limestone bedrock legible in the iron-tinged finish
Finish: Warming, distinctly northern – very long
