Verdict
Cuishito rarely leaves Oaxaca in bottle form, which makes Pescador's release something close to an act of translation. Leoncio Santiago treats the unclassified karwinskii cousin with the same restraint he brings to the cuishe – no sweetening, no padding, just the plant on its own terms. Worth tracking. Drink it next to the cuishe in the same sitting; the small differences are where the pleasure lives.
A maguey most Americans will never see, handled like it matters
Tasting notes
Nose: Crushed river rock, underripe pear, a wisp of woodsmoke behind the fruit
Palate: Lean, green, taut. The 48% is calibrated – not loud, but it holds the rare-agave signature firm. A dry-grass note runs through the center
Finish: Clean, stony, lingers past expectation
The bottom line
Track it. Cuishito bottlings are vanishingly rare stateside
