The 40% and 48% Pluma Negra are the cleanest illustration on the US market of what proof does to espadín. Same producer, same agave, same method – but at 48% the plant commits and the liquid becomes a legitimate sipping bottle. Anyone arguing that proof doesn't matter should drink these back-to-back. Buy the 48%. Put it near Nuestra Soledad or Vago for comparison.

Nose: Roasted agave up front. Citrus peel, light woodsmoke underneath
Palate: Mid-weight, structured, clean. 48% is where espadín starts behaving like a serious sipping agave, and Pluma Negra's version shows exactly that step up from the 40% version – same house style, radically more to say
Finish: Herbal, clean – medium
