Verdict

Capón espadín, where the quiote is cut so the plant pours its sugars back into the heart, rewards a patient hand. Onofre Ortiz harvested these agaves in spring and rested the distillate before bottling, so it lands round and concentrated rather than hot. Buy it next to a Lalocura espadín to taste what castration does to the agave.

Tasting notes

Nose: Cooked agave, dried herb, brown sugar, warm earth, a soft smoke

Palate: Round and concentrated at 48.4%. Castrating the agave before harvest pushes its sugars back into the piña, and Onofre Ortiz's Miahuatlán distillation keeps it earthy and full

Finish: Long, earthy, gently sweet

The bottom line

Buy it; capón espadín is a specific pleasure
