Verdict
Capón espadín, where the quiote is cut so the plant pours its sugars back into the heart, rewards a patient hand. Onofre Ortiz harvested these agaves in spring and rested the distillate before bottling, so it lands round and concentrated rather than hot. Buy it next to a Lalocura espadín to taste what castration does to the agave.
