Verdict

Pairing jabalí with tobalá is unusual but the agaves share floral DNA, and Rubén López's ensamble leans into that kinship. The result is round and aromatic without being perfumed. A rare-agave ensamble that rewards slow drinking. Track it alongside the Real Minero Jabalí-Tobalá for category comparison. Both are serious.

Jabalí and tobalá agree more than they argue – Lopez hears both

Tasting notes

Nose: Orange blossom, wild herb, cooked sugar, stone

Palate: The tobalá's round sweetness and the jabalí's oily floral lock together cleanly. 48.1% carries both plants. Rubén López composes the pair rather than blending them

Finish: Floral-to-stone, clean, long

The bottom line

Buy it. The pairing works
