Papalometl is the rarest kind of rare – a maguey most serious mezcal drinkers can name but have never tasted. Francisco Trujano's work via Quiote Mezcalería is a specialty release the catalog was built for. This bottle deserves commitment. Tasting notes

Nose: Dried stone fruit up front. Mineral cool, a green herb thread, faint smoke underneath

Palate: Dense, complex, completely distinctive. Papalometl (a Potatorum cousin) behaves differently than tobalá – more mineral, less floral, same wild-agave intensity. Francisco Trujano brings it to proof range that honors every year of the plant's slow growth

Finish: Stone, cool
