Verdict
Gregorio Hernández is a maestro whose name appears on bottles that reward attention, and this tobaziche via Quiote Mezcalería is one of them. Single-maguey tobaziche bottlings at this level are rare – most producers bury tobaziche in ensambles. We'd rank it with Real Minero and Lalocura among the top karwinskii work available.

Tasting notes
Nose: Cedar up front. Wet granite, dry fig underneath
Palate: Dense, mineral, woody. Tobaziche at 45-50% in Gregorio Hernández's hand reads with the composure of a mezcal that's been decades in the making. The cedar-and-stone signature is textbook, handled with total restraint
Finish: Stone-cool – very long
